Based on research and recommendations, following were the final plans:
Czech Republic - Prague
Private guided tour - this included going to the Old Towne Square, Astronomical Clock, Jewish Cemetary, Charles Bridge, Prague Castle, Lennon Wall and more. Would take around 6 hours (all walking).
Germany - Fussen
Self-guided tour of Neuschwanstein Castle (Disney used this castle to inspire the construction of the Sleeping Beauty Castle).
Austria - Vienna
Lipizanner Spanish Riding School Guided Tour
Switzerland - Interlaken
Lauterbrunnen and Murren Alpine Village group tour - this included the Staubbach Falls.
Jungfrau - Top of Europe - bus/cog rail to the top and cog rail/cable car on the way down.
